Founded in 2018 by Paul Jordaan and Pauline Roux, Paulus Wine Co. has rapidly established itself among South Africa's most exciting boutique wine producers, earning international recognition for its exceptional, site-specific Chenin Blancs. Driven by a shared passion for the Western Cape's old vineyards, the duo combines extensive winemaking experience with a commitment to organic viticulture, minimal intervention and authentic terroir expression.

Paul Jordaan brings considerable expertise from his 12 years as winemaker at the renowned Sadie Family Wines, while Pauline Roux has gained valuable international experience at prestigious estates including Domaine Drouhin in Oregon, Brokenwood in Australia's Hunter Valley, and South Africa's Mullineux and AA Badenhorst.

The winery focuses on two distinctive old-vine Chenin Blanc vineyards in the Swartland and Stellenbosch. Bosberaad originates from dry-farmed bush vines planted in 1980 on the granite-rich slopes of Paardeberg's Siebritskloof Valley. Owned by third-generation grower Franziska Wickens of Waterval Farm, the east-facing vineyard benefits from afternoon shade, producing concentrated fruit with remarkable freshness and balance.

Bartàs, meanwhile, comes from bush vines planted in 1978 in Stellenbosch's coastal Helderberg region, just five kilometres from the Atlantic Ocean. Its shallow granite soils and maritime influences produce wines of striking elegance, minerality and precision.

Both wines are crafted using the same restrained approach, with hand-harvested grapes whole-bunch pressed and spontaneously fermented in seasoned oak barrels and concrete. Following 10–12 months of maturation, the wines are bottled unfined and unfiltered with minimal sulphur additions.

Bosberaad delivers richness, texture and vibrant acidity, while Bartàs offers a more delicate, mineral-driven expression reminiscent of the Loire Valley. Together, they demonstrate Paulus Wine Co.'s dedication to showcasing the remarkable diversity and potential of South African Chenin Blanc.
