Tasting Note

Flavours of a summer fruit salad of paw paw, honeydew melon and ripe, golden quinces – drizzled with citrus flower water and a squeeze of orange skin oil. A delicious floral fragrance and juicy tropical fruit, infused with a fennel-like herbal thread and a faint whiff of wood smoke. Fermented entirely with naturally occurring yeast, this is an alternative style of Sauvignon Blanc that is both intricate and textural, with a rich, succulent palate finishing crisp and long with a flinty dryness.

Product Notes

Greywacke Marlborough Wild Sauvignon is a unique and complex wine that showcases the true essence of Marlborough terroir. Made from 100% Sauvignon Blanc grapes, this wine is fermented using wild yeast, which contributes to its characteristic mineral and flinty notes. On the nose, aromas of green apple, citrus, and passionfruit mix with hints of barrel fermentation and lees aging. The palate is rich and textured, with flavors of stone fruit, gooseberry, and white peach, leading to a long and flavorful finish. Pair this wine with seafood, shellfish, and spicy Asian cuisine for the ultimate food and wine experience.

About the Winery

Greywacke

The Greywacke winery in New Zealand wouldn’t have been so popular today, if Kevin Judd, one of the pioneer winemakers from Marlborough, hadn’t taken a personal interest to identify it and develop the place. This winery is named after the famous bedrock of New Zealand, the grey-wacky, which is almost considered as the national stone of the place. Judd, a professional photographer, explored the winery to a great extent to become a master in making wines without any intervention. Thanks to the unique winemaking process followed here, the wines produced in the Greywacke winery are full of authentic flavours and good concentration of the fruits.
