Tasting Note

An exceptionally complete wine with a great ageing potential, shows the true essence of what Santorini and Assyrtiko are about: Aromatics of basalt and pumice stone with ripe tropical fruits, honeysuckle and maritime salinity, and a palate of salty green fruits with high levels of minerality and acidity. The long aftertaste adds depth and weight to the wine making it a perfect pairing for seafood and fish.

Vassaltis Santorini Assyrtiko is a Greek wine that comes from the island of Santorini in the Aegean Sea. Made from 100% Assyrtiko grapes, it boasts a bright and fresh bouquet of citrus fruits, white flowers, and minerality. On the palate, it delivers a well-balanced and crisp acidity with mineral and chalky undertones, leaving a lingering and refreshing finish. The grapes are grown in rugged volcanic soils, on vines over 50 years old, resulting in a wine that is terroir-driven, with a unique taste of the Santorini landscape. Vassaltis Santorini Assyrtiko is a great match for seafood, salads, and light Mediterranean dishes.

Vassaltis

Vassaltis is a part of Santorini's winemaking history. The owner of Vassaltis is Yannis Valambous, and he has a great passion for wine which brought him back to Santorini Island. where he had spent a holiday with his family as a child. In the Greek financial crisis of 2010, Yannis got a new idea and decided to put some new life into the vineyards his father had left him.
